
This recipe is very simple and you likely have everything you need to make it in your pantry right now. This made enough for two sandwiches so I have some leftover and am glad to have lunch for tomorrow already prepared. I think this would do nicely for days I want to bring a bagged lunch to work.
No Tuna Salad Sandwich
1 can chickpeas, rinsed, drained and mashed
1 green onion chopped fine
1 rib of celery chopped fine
1 1/2 tbsp Vegenaise or other vegan mayo
1 and 1/2 tbsp pickle relish
salt and pepper to taste
Sprouts
Sliced tomato
Sandwich bread (I used a multi grain roll)
Mix the chickpeas, onion, celery, relish, salt and pepper until well incorporated. Place about half the mixture on the bread, top with tomato and sprouts. I served mine with some potato, squash and carrot chips and pickles.
