We have a small garden in the backyard where we are growing tomatoes, peppers (well, until the rabbits got to them), cucumbers and some herbs. The cucumbers are starting to go nuts and we are starting to have more cucumbers than we know what to do with! Now, don't get me wrong, this is a good problem to have.
I recently received a cucumber salad recipe from the Veg News recipe club and it sounded pretty good. While I did not follow the recipe exactly, it did serve as the inspiration for this salad (which was a big hit at a cookout earlier today).
This is very simple yet very flavorful and a welcome cool treat on a hot summer afternoon.
Spicy Cool Cucumber Salad
3 cucumbers, peeled, sliced lengthwise and seeded
Juice of two limes
2 tbsp tamari soy sauce
1 tbsp agave syrup
1 clove garlic, minced
1 serrano chili pepper, minced
2 tbsp fresh mint rough chopped
1/4 cup raw peanuts, chopped
Slice the cucumbers very thin and place in a bowl.
In a bowl mix together the lime juice, agave syrup, tamari sauce, garlic, serrano chili and the fresh mint. Mix until incorporated.
Pour over the cucumbers and mix to coat. Place the salad in the refrigerator until you are ready to serve it. Right before serving put the peanuts on top and garnish with additional fresh mint if desired.
