Black Bean and Salsa Lettuce Wraps

Sometimes I spend the entire day at work just thinking about what I am going to make for dinner. Today was one of those days. Usually when I do this I am dreaming up some elaborate meal; you know, the kind that you have to shop for a million ingredients to make, makes a huge mess and takes forever to finish.

Well, not this time.

All I could think about were black beans and salsa. Add to them a little heat, lime and cilantro and wrap it up in  a lettuce leaf? Simple perfection.

I made these the second I walked in the door and I think the entire process took a whole ten minutes. No cooking required!

Black Bean and Salsa Lettuce Wraps

1 can black beans rinsed and drained
2 large jalapeno peppers, minced
1/3 cup salsa
Juice of 1 lime
3 tbsp chopped cilantro
Salt to taste
Romaine lettuce leaves

Mix all ingredients except the lettuce in a bowl.  Spoon into lettuce leaves and serve.
