Tonight was one of those nights. The rest of the family wanted their tacos with ground meat (sigh). I decided that for my tacos instead of using textured vegetable protein crumbles as I usually do (which I actually don't love) I would try something a little different for my own tacos. I turned to my go to meat substitute- the chickpea. I have said it before and I will say it again- I am convinced there is nothing you cannot make out of a chickpea!
1 can chick peas rinsed, drained and roughly mashed
1 rib celery finely chopped
1/2 medium onion, chopped
1 serrano chili pepper, chopped
3 tbsp salsa
1 tsp chili powder
1/2 tsp cumin
1 tbsp olive oil
3 tbsp chopped cilantro
Salt and pepper to taste
In a saute pan heat the olive oil over medium heat. Add the onion, celery and serrano chili and saute until soft and starting to color. Season with salt and pepper. Add the mashed chickpeas and salsa. Stir and allow to heat through. Add the chili powder and cumin. Give another stir. Add the cilantro and res-eason with salt and pepper as needed.
Serve with either hard or soft taco shells (or both) and a variety of toppings. We opted for raw onion, chopped tomatoes, shredded lettuce, chopped cilantro, Daiya Pepper Jack Cheese and Tofutti Sour Cream.
It was a fun and delicious dinner!
