Family Taco Night- Chickpea Tacos

My whole family enjoys taco night. You know, the "Tacos in a Box" that you can get in the ethnic section of the grocery store. We do not do that often  but every once in a while we indulge. The kids really love it and the more toppings we put out, the better.

Tonight was one of those nights.  The rest of the family wanted their tacos with ground meat (sigh).  I decided that for my tacos instead of  using  textured vegetable protein crumbles as I usually do (which I actually don't love) I would try something a little different for my own tacos.  I turned to my go to meat substitute- the chickpea. I have said it before and I will say it again- I am convinced there is nothing you cannot make out of a chickpea!

I absolutely loved it. They were so flavorful and delicious; yet healthy and low calorie, too.  This is a real winner and my new go to on Family Taco Night.

Chickpea Tacos

1 can chick peas rinsed, drained and roughly mashed
1 rib celery finely chopped
1/2 medium onion, chopped
1 serrano chili pepper, chopped
3 tbsp salsa
1 tsp chili powder
1/2 tsp cumin
1 tbsp olive oil
3 tbsp chopped cilantro
Salt and pepper to taste

In a saute pan heat the olive oil over medium heat.  Add the onion, celery and serrano chili and saute until soft and starting to color. Season with salt and pepper. Add the mashed chickpeas and salsa. Stir and allow to heat through. Add the chili powder and cumin.  Give another stir.  Add the cilantro and res-eason with salt and pepper as needed.

Serve with either hard or soft taco shells (or both) and a variety of toppings. We opted for raw onion, chopped tomatoes, shredded lettuce, chopped cilantro, Daiya Pepper Jack Cheese and Tofutti Sour Cream.

It was a fun and delicious dinner!

  1. This looks so good! I LOVE chickpeas! This is definitely going to be on our menu this week. My husband would choose meat any day for his tacos.. but he has agreed to one vegan meal a week... this is going to be it!

I love corn tortillas, and have a tortilla press that hasn't gotten used as of yet. I think it will this week.. we will have homemade corn tortillas for these tacos!

    Thanks for sharing!

  2. These look awesome. All these nacho and taco VeganMoFo posts make me crave them!

  3. Hi Lee, I just found your Blog and the recipies look amazing. I too love chick pea taco's and have only reciently decided that I want to mash them first. We leave them whole and the kids enjoy the chase as they tumble out of the shells. I also love the fact that I can use them later in my salad :) I am so looking forward to trying more of your recipies!

    1. Hi there! Thanks for the kind words!! I love the image your descripton of "the chase" conjures up!! I don't think I could get my kids to ingest any chickpeas if they were left whole, though!! However, I will keep trying every so often as their tastes seem to change often.
