Onion Twirls

Oh, how I love onions!  I go through more onions then anyone I know. I love them all, Spanish, Vidalia, red, white, etc.  And pretty much anything tastes great wrapped up in puff pastry.

I whipped this up for a quick lunch and it was great.  I think these will also become a party food staple- easy to make, elegant in appearance and delicious!

Onion Twirls

1 sheet puff pastry thawed according to package directions
1 1/2 medium Vidalia onion sliced thin
2 tbsp fresh herbs (I used oregano, thyme and chive) chopped
1 tbsp olive oil
Salt and pepper to taste

Preheat oven to 400degrees.

In a saute pan, heat olive oil over medium heat.  Add onions and saute until soft and just starting to brown. Add in the herbs, salt and pepper.

Lay the puff pastry sheet on a flat surface and spread the onion mixture on top.  Roll up the puff pastry starting with the short side. Once rolled wrap in plastic wrap and put in the freezer for about 30 minutes. You can skip this step but I find the roll easier to cut when it is a little firmer.

Once out of the freezer remove the plastic wrap and slice into 1/2" thick slices.  Place on a lightly greased baking sheet and bake at 400 for about 20 minutes or until golden brown.

Serve immediately.
